Gingerbread
2 eggs, beaten3/4 c brown sugar
3/4 c molasses (the darker the better)
3/4 c melted butter (or oil)
2 1/2 c flour
2 tsp baking powder
2 t ginger
1 1/2 t cinnamon
1/2 t cloves
1/2 t nutmeg
1 t baking soda
1/2 t salt
1 cup boiling water
Mix the wet ingredients with the brown sugar, add in the dry ingredients. Mix in the boiling water last. Pour into a 9x9 greased baking pan. Bake 350 F, for 30-40 minutes. A toothpick should come out clean.
