Fruit-Nut Bars
Sift together:
7/8 cup flour (3/4 cup + 2 Tbsp)
1 tsp baking powder
1/2 tsp salt
Beat 2 eggs until thick and lemon colored.
Add to egg mixture and combine:
1 cup brown sugar (packed)
2 tsp vanilla
Fold in sifted dry ingredients
1 cup chopped nuts
1 cup chopped dates
1 cup fruits and peels
Spread batter in 8x8x2 inch pan lined with waxed paper. Bake at 350 for 40 minutes or until golden brown. Remove from pan while warm. Cut in 2-inch x 1-inch bars.
